S'mores Chocolate Chip Cookies
Ingredients
3/4 cup (1.5 sticks) unsalted butter, softened.
3/4 cup packed brown sugar
1/4 cup granulated sugar.
1 large egg (room temp)
2 tsp pure vanilla extract
2 cups all-purpose flour
2 tsp cornstarch (for softness)
1 tsp baking soda
1/2 tsp salt
1.25 cups semi-sweet chocolate chips.
S'mores Toppings:
12 regular marshmallows (cut in half)
1/3 cup crushed graham cracker crumbs,
4 oz semi-sweet chocolate (for melting).
Instructions
Cream the Base: In a stand mixer or with a hand mixer, beat the softened butter and both sugars on medium speed for 2 minutes until light and fluffy. Beat in the egg and vanilla.
Combine Dry Ingredients: In a separate bowl, whisk the flour, cornstarch, baking soda, and salt. Slowly add this to the wet ingredients on low speed until just combined.
Fold in Chocolate: Stir in the chocolate chips by hand. Cover and chill the dough for at least 1 hour (crucial for texture!).
Bake: Preheat your oven to 350°F (177°C). Roll 1.5 tablespoon balls of dough and space them 2 inches apart on a parchment-lined sheet. Bake for 10–11 minutes until the edges are barely golden.
The Toasted Marshmallow: Switch your oven to High Broil. Place half a marshmallow (sticky side down) on each hot cookie. Broil for 1–2 minutes—watch them like a hawk!—until golden brown.
Finishing Touch: Melt the 4 oz of chocolate and spoon it over the toasted marshmallows. Immediately sprinkle with graham cracker crumbs.
