MONGO BEAN LINGUINE IN SALSA VERDE
Mongo is a legume so rich in protein that is deliciously sautéed in minced garlic, shallot, and ginger. Then it is sprinkled with ground black pepper to taste and lavishly topped with parmesan cheese and chicharon baboy.
The salsa verde sauce is made up of fresh green bell pepper and broccoli juice reduced for three minutes by simmering in a pan with fried tinapa flakes and chicken stock. After which it is mixed with linguine cooked al dente.
Plating is done by placing macaroni mixed with salsa verde sauce and topped with sautéed mongo beans, parmesan cheese and chicharon baboy.
Served while is still warm!
(Note: In Batangas, when sautéing the mongo beans, minced tomato and thinly sliced ampalaya are added to achieve a bitter sour taste that suits the Bantangueno’s plate.)
