Basque burnt cheesecake. (Sansebastian cheesecake )

Ingredients (18cm springform cake pan )

580g Cream cheese 3 Eggs ( = 170~180 g)

2 Egg yolks

150g Sugar

350ml Heavy cream

25g Cornstarch

Preheat the oven to 230°C 18 cm springform cake pan with baking paper.

Beat cream cheese and sugar in the bowl until smooth and

creamy.

Add the eggs, then cornstarch and heavy cream.

Beat until smooth.

Pour batter into prepared pan. Bake for 30 minutes (until the top is deeply golden brown and cake is set.)
