In high summer, the city loosens its grip.

Not everything leaves
but enough does to change the pressure.

Streets become longer.
Echoes travel further.
Surfaces hold heat without interruption.

Rotterdam is not emptier in July and August.
It is less interrupted.

This absence is not silence.
It is exposure.

A city partially emptied,
not of life, but of noise.

This menu studies that condition.

Across six courses, we follow the after-effects of presence:
salt carried inland without crowds,
fruit reaching over-ripeness unnoticed,
heat stored in structures that no longer cool between passings.

Nothing is still.
But everything is less disturbed.

A seasonal study in reduced density.

At Fundamental we investigate the distinctive characteristics of our surrounding landscape zones (Sea, Salt Marshes, Dunes, Rivers, Polders and Forests), examining different soils, their impact on flavour and how they relate to our ever-changing environment. Gastronomy is more than just food; it encompasses science, mathematics, art and design elements that likewise inspire meaningful conversations at the table.
