Cream, roasted trombone zucchini marinated in vinegar with zucchini, cubed raw zucchini and a roasted seed mix

Pasta Porcini, Salamella Mantovana e salamoia(l’antico condimento toscano)

Porcini slices fried in butter, set aside. Chopped porcini toasted brown and set aside. Salamella and garlic browned and deglazed with white wine, added to sausage, browned mushrooms and a bit of sour cream and pasta water for creaminess. Salamoia bolognese added at the end with a bit of parsley. Topped with sliced porcini and dusting of salamoia.
