I was craving a snack...had aubergine in the fridge, and this was the result π Baked aubergine with smoked paprika homemade tomato dip. When I moved to Sicily years ago, I did not even know how to eat aubergines, because they are not part of the traditional Portuguese cuisine, nowadays I am a big fan! I needed inspiration...after opening the fridge and the cabinets, before the impro started, I needed some inspiration, which I found online. The result was: thinly sliced aubergines, sprinkled with peper, smoked paprika, bread crumbs and grana padano cheese and a drizzle of olive oil. Off they went to the oven until crispy/gold and then I served with a leftover of cold homemade tomato sauce that I had in the freezer and which also had been made with smoked paprika. A little bit of coriander and a cold rosΓ©...was perfect πππ Fun fact: to the day I still say Melanzana before I can even remember the Portuguese word for Aubergine (Eggplant) π

always surprises me with the unexpected flavour combinations he invites our palate to experience. His recipes are the only ones I never change, because I donβt dare! I donβt want to miss out on yet another party of flavours! I even go out on purpose to buy that one ingredient that was missing...and let me tell you, it was one of the best salads ever!! Oven glazed lemons, mint, pomegranate and pomegranate mollasses work divinely together π

Risotto with Spinach, Cramberries and Safran Sauce.
The original recipe was actually with raisins, but I had none, so I used cramberries. I also decided to add toasted laminated almonds and grated parmesan and it worked very well πππ
