I nailed it!
You know that sour spicy runny curry often served with tosei?
I understand it's a similar recipe for Southern Indian fish curry but it's made into a vegetarian curry sauce instead.
So, first clue: use fish curry powder.
Then, as I often found bits and pieces of eggplant and mangoes in it, it's therefore crucial to have these two fruits in the curry.
By chance today we found asam belimbing/belimbing buluh.
Semi-ripe mangoes gave sweetness and tartness.
No sugar or jaggery was required to balance the sour flavour.
Thus a similar curry was successfully made!
It was delicious!
Other things on the table:
Roasted ayam berempah
Sambal telur (egg sambal)
Jelatah (pineapple and cucumber salad)
Pappadom
Come learn with me, as I'm a master at reverse-engineering a recipe 💃🏻😝
