Yesterday was our Hari Kebangsaan, let’s celebrate this historic day with the de facto national dish, NASI LEMAK
今天是我们的国庆日,身为马来西亚人必须在这充满纪念意义的日子里增添一些仪式感,而我们出名的椰浆饭也是必不可少的
As we all know that Sambal is the most important side dish to be served with Nasi Lemak, here is a simple recipe for you to make yourself the most authentic & delicious Sambal
众所周知椰浆饭的“灵魂”就在于Sambal酱,所以这里给你附上一道简单食谱让你制作出最地道美味的Sambal
Ingredients 材料:
• 100 g shallot 100 克 红葱头
• 30 g garlic 30 克 蒜头
• 1 stalk lemongrass (cut into pieces) 1 枝 香茅 (切段)
• 150 g dried chilies (cut, rinsed, drained) (Advice: Dried chilies may irritate your skin, wear gloves when handling) 150 克 辣椒干 (剪段,洗净,滤干) (温馨提醒:辣椒干非常辣,处理时最好戴手套)
• 600 ml cooking oil 480毫升 食油 (+120 毫升 -选择性)
• 75 g fine sugar 75 克 砂糖
• 20 g salt 20 克 细盐
• pinch Ajinomoto MSG少许 味精
Directions 步骤:
Step 1
Combine shallot, garlic and lemongrass in a blender, add in 120 ml cooking oil and blend.
把红葱头,蒜头和香茅放入搅拌机,加入120毫升食油搅拌
Step 2
Add in half of the dried chilies and 120 ml cooking oil, blend again.
加入一半的辣椒干和120毫升食油再继续搅拌。
Step 3
Add in the remaining dried chilies and 240 ml cooking oil, blend until smooth (stir with rubber spatula in between blending).
加入其余的辣椒干和240毫升食油,继续搅拌至细腻,间中不时用橡皮刮刀搅拌。
Step 4
Heat the chili paste in a wok over medium heat. When heated, turn to medium low heat and continue stirring.
把辣椒糊放入锅中,开始用中火加热,然后转至中小火继续不停拌炒。
Step 5
After stirring for 5 minutes, add in another 120 ml cooking oil.
拌炒5分钟后,可再加入120毫升食油 (油多辣椒糊比较快炒香-懒人的做法,不加也可以 )。
Step 6
After another 10 minutes, the chili paste starts to have fragrance.
再过10分钟后,辣椒糊已经开始有香味了。
Step 7
After cooking for another 5 minutes, the chili paste is fragrant.
再继续拌炒多5分钟后,辣椒糊已经炒香了。
Step 8
Turn to low heat, add in sugar, salt and MSG, mix until well blended.
转至小火,加入糖,盐和少许味精拌匀。
Step 9
Keep the extra chili oil separately, fill the sambal chili sauce into clean jars and keep refrigerated. (To consume, use a clean and dry spoon to take out the desired portion and return to fridge immediately.)
把多出的辣椒油分开收藏,辣椒酱装入干净的玻璃瓶,放入冰箱冷藏。(食用时,用干净的汤匙取出所需的分量后马上放回冰箱冷藏。)
Step 10
Keep refrigerated
放入冰箱收藏。
