AMADAI (TILEFISH | 马头鱼), grilled with fresh peppercorn; is fragrant and bright in a way that no other pepper quite manages to be.
Sushi Chef Ishiguro chose this for the Father's Day omakase because it is the kind of dish that doesn't announce itself. It simply arrives, does exactly what it should, and leaves a mark you only fully notice later.
