Cornbread is just a comforting dish! This recipe has extra corn because I love that extra bite and a garlic, parsley vibe through it making it an absolutely delicious savoury snack or the perfect accompaniment to stews, fried chicken, pork chops, chili… pretty much anything to be honest. My daughter loves this on its own and it comes along with us on picnics often.

I significantly reduced the sugar content in this recipe as I’m not one for super sweet cornbread and I like it to lean more to the savoury side, there’s enough sweetness from the creamed corn, corn and a little sugar to give it a nice buttery, sweet and salty balance!
