Ethiopia has some of the best food in the game! This is a "fasting plate". It is called that because for 55 days of the holiday Great Lent, Ethiopian Orthodox Christians are only allowed to eat one meal per day, after 3pm, and cannot consume dairy, meat, or eggs. This otherworldly dish hits all of these criteria with style. 🇪🇹

Nasi Lemak is now among my top favorite dishes. This symphony of flavor served can be found in Malaysia (it is the national dish), Singapore, Indonesia, and southern Thailand.

It is traditionally eaten for breakfast but many places serve it throughout the day. It is also often sold "to go", wrapped securely in a banana leaf.

Why is it so good? It starts with the rice, which is cooked in coconut cream (nasi lemak means 'rich rice'). Add to that roasted peanuts, egg, fried anchovies, fried chicken, and spicy chili sauce known as sambal.

Malaysian food in general is insanely good and doesn't get enough credit. 🇲🇾
