1 cup fenugreek seeds (soaked overnight)
1 bunch fenugreek leaves (washed and chopped)
1 large onion (finely chopped)
2 cloves garlic (minced)
1 tsp ginger (grated)
2 green chilies (sliced)
ยฝ tsp turmeric powder
1 tsp chili powder
ยฝ tsp mustard seeds
1 sprig curry leaves
2 tbsp oil
Salt to taste

1๏ธโƒฃ Soak the fenugreek seeds overnight and drain well.
2๏ธโƒฃ Heat oil in a pan and add mustard seeds. Once they splutter, add curry leaves, onions, garlic, ginger, and green chilies. Sautรฉ until golden.
3๏ธโƒฃ Add turmeric powder, chili powder, and salt. Stir well.
4๏ธโƒฃ Add the soaked fenugreek seeds and cook for 8โ€“10 minutes, stirring occasionally.
5๏ธโƒฃ Add the chopped fenugreek leaves and mix thoroughly.
6๏ธโƒฃ Cover and cook on low heat for 10โ€“15 minutes until the leaves are tender and the flavors are well combined.
7๏ธโƒฃ Serve hot with steamed rice, chapati, or dosa. ๐Ÿ˜‹๐Ÿš
