He is Don Gerardo, he is the community leader in one of many mountain settlements in the Oriental Sierra Madre. We were invited to his 50th bday party where as a festivity he and his family killed a cow and cooked it for family and friends.
In the photo sequence we can see the steps taken into the preparation of “barbacoa” what is practically slow cooked meat.
A fire is set, then large agave leaves are layered over the blazing charcoals to protect the meat from direct heat, then meat is stuffed in a bag and put over the agave leaves and wrapped in the same. Then it is covered with dirt and set to rest there fore 10+ hours.
Didn’t get to photograph the end result I was hungover as f**k from the big ass party they had drinking homemade apple liquor.
