The Precision of Chablis by Patrick Piuze ✨
Chablis Terroir de Chablis
If you are looking for a Chardonnay that captures the absolute truest, most crystalline expression of Chablis, this is it.
Crafted by one of the region’s most brilliant modern artisans, the Patrick Piuze ‘Terroir de Chablis’ is a masterclass in tension and terroir. Piuze works strictly with old vines, harvesting the fruit himself to guarantee pristine quality. This stunning cuvée comes from a sublime clay-limestone terroir, boasting vines with a serious pedigree—80% are 38 years old and 20% are an incredible 64 years old! 🍇
What’s in the glass?
🍏 The Nose: Expressive and crystalline, bursting with crunchy green apple, sharp lemon zest, and that unmistakable, flinty sea-shell minerality.
💎 The Palate: Tense, beautifully precise, and electric. It is driven by a razor-sharp, mouth-watering acidity and a chalky, textured mid-palate that leads to a long, bone-dry, and intensely saline finish.
In the Cellar:
To let the terroir speak without being masked by oak, vinification takes place primarily in stainless steel vats (90%) with just a touch in multi-wine neutral barrels (10%), undergoing a patient 2-month alcoholic fermentation.
🍽️ Best Served (Chilled at 10-12°C): This is an absolute dream for gastronomy. Pair it flawlessly with smoked salmon, fresh sushi, classic French snails, rich poultry in a cream sauce, or a tangy goat's cheese.
