Mediterranean Vegetarian Rice Salad 🥗

Ingredients
2 cups cooked rice (brown rice, basmati, or jasmine), cooled
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, chopped
½ red onion, finely sliced
½ cup corn kernels
½ cup chickpeas
100 g feta cheese, crumbled (optional)
Fresh parsley or mint, chopped
Dressing
3 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1 garlic clove, minced
Salt and black pepper to taste
Instructions
Cook the rice and let it cool completely.
In a large bowl, combine rice, tomatoes, cucumber, bell pepper, onion, corn, and chickpeas.
Whisk together the olive oil, lemon juice, mustard, garlic, salt, and pepper.
Pour the dressing over the salad and toss well.
Top with feta and fresh herbs before serving.
Chill for 15–20 minutes for the best flavor.
