Stuffed Chicken Breast with Creamy Red Pepper Sauce 🍗
You’ll need:
For the chicken:
• 4 Prime chicken breasts
• 250g ricotta
• 1 heaped tbsp grated parmesan
• Salt & pepper
• 2 tbsp chopped sundried tomatoes
• 1 tbsp chopped fresh basil
• 2 tbsp chopped walnuts
For the sauce:
• 100g Prime smoked bacon, diced
• 1 small onion, finely chopped
• 3 cloves garlic, sliced
• 2 tbsp olive oil
• Fresh thyme
• 1 red pepper, sliced
• 1 tbsp flour
• 150ml cream
• 250–300ml chicken stock
• Salt & pepper
• Cooked rice to serve
