Kotta Pol Sambol Kitchen (or Kotta Pol Sambola) is a rustic, deeply flavorful, and slightly lesser-known variation of the classic Sri Lankan coconut sambol.
Unlike the standard Pol Sambol which uses fresh, succulent grated coconut, Kotta Pol Sambol is made using matured, dried coconut (often near the copra stage) or the firm, dense coconut scraped from a dry coconut that has been stored for a while (hence "Kotta," which implies a hardened or dried texture).
Because the coconut has less moisture and a higher oil concentration, this sambol has a distinctively rich, intense flavor and a beautiful, slightly coarse texture.
