Recipe - Salt fish fritters/Accra 😋
Ingredients
•Salt fish
•Pepper
•Garlic
•Flour
•Baking Powder
•Cornmeal(Optional)
•Thyme(Or any seasoning of your choice)
•Oil
•Milk
•Egg
How much? - Caribbean people don't measure, we have flavour inside, so we just know 🤣

Method
1.Heat oil in a large pot until it reached 350 degrees. (This is extremely hot so use a deep pan)
2.In a large bowl, mix your salt fish(strip salt fish in small pieces), peppers, garlic, flour, a bit of baking powder and cornmeal (optional).
3.Whisk separately with some milk and egg.
4.Add the egg mixture to the conch mixture and stir until all mixed in. (Remember you will have lumps from the ingredients but not the flour)
5.Season batter to your liking - salt, thyme, etc
6.Using a small scoop or spoon, drop spoonfuls of the batter into the hot oil.
7.Cook accra for 4-5 minutes per side or until golden brown, turning often. Remove fritters to a paper towel-lined baking sheet to drain. Repeat for all batter.
*Remember to move the excess oil in the accras using paper towels.*
