Chicken Pulao
🍗✨ Chicken Pulao Recipe by Zaffran Kitchen
Ingredients:
• 500g chicken (with bone)
• 2 cups basmati rice (washed & soaked 20 mins)
• 2 onions (sliced)
• 2 tomatoes (optional)
• 2 green chillies
• 1 tbsp ginger-garlic paste
• 1 cup curd
• 3 tbsp oil/ghee
• Whole spices: 1 bay leaf, 4 cloves, 4 peppercorns, 1 cinnamon stick, 2 cardamom
• 1 tsp cumin
• 1 tsp garam masala
• 1 tsp turmeric
• 1 tsp red chilli powder
• Salt to taste
• Mint + coriander leaves
• Green chilli paste
👩🍳 Method:
Chicken Marinade:
1. Add chicken to a bowl
2. Add curd, ginger garlic paste, turmeric, red chilli powder, coriander powder, garam masala powder, green chilli paste to the bowl
3. Mix well and leave aside for 30 mins
Rice:
1. Soak the rice in warm water
2. Keep aside for 30 mins
Pulao:
1. Add oil to a large pot
2. Add in bay leaves, cardamom, cinnamon and other whole spices along with green chilli and onion
3. Sauté until the onions are golden brown
4. Add tomatoes and mix
5. Add the marinated chicken and let it cook
6. Add water and let it simmer
7. Add rice and mix it well
8. Cover it and let it cook for around 30 mins
9. Occasionally, keep checking water level to know if it’s cooked well
Fluff & serve
Garnish with mint/coriander. Enjoy with raita! 😍
