SIX DEGREES COLLAPSE ACROSS A TABLE

In the foundational years of Subko, our appetite for experimentation extended beyond the Roastery, the Bakehouse, and the Kitchen. It found its way onto the floor of Mary Lodge in Bandra, back in its 1.0 avatar, when it was just a single floor. That’s where we began to explore a different kind of craft: the act of gathering.

Six years ago, we introduced a single, long table into the space. It was intentionally left open, without reservations or the expectation of familiarity, as a way to bring people closer. The Community Table has reminded us, time and again, of the idea of Six Degrees of Separation (re: proximity). That even in a vast, crowded world, people are never quite as far apart as they might seem. Around the Community Table, that distance often collapses into a shared moment.

As we mark 6 years of Subko, we reflect on how this community table evolved into a setting where individuals from disparate contexts found themselves seated side by side. Without the need for formal pretext, conversations moved with ease. These exchanges carried everything from passing observations and sharp disagreements to the beginnings of relationships. What began as simple physical proximity often unfolded into something deeper, as strangers found common ground from just a chair’s distance.

We recognize that true community is rarely seamless or comfortable. It asks for a willingness to share space with the unfamiliar. And yet, it is within this friction that a collective identity begins to take shape. Six years into this journey, we remain committed to narrowing the degrees that once kept us apart, one seat at a time.

SIX DEGREES OF `𝖲̶𝖤̶𝖯̶𝖠̶𝖱̶𝖠̶𝖳̶𝖨̶𝖮̶𝖭̶` PROXIMITY

There is a theory that any two people on Earth are connected by a chain of no more than six intermediaries. For Subko, this chain is experienced as proximity. We have spent the last six years demonstrating that this is the very foundation of craft; a framework that allows us to directly connect the origin to our communities through hypertraceability and human relationships — where every link is accounted for, every hand acknowledged, and nothing exists in isolation.

Our work in Specialty Coffee, Specialty Wheat, and Fine Cacao is defined by the individuals who move the work: from the generational expertise of producers at origin to the technical precision of our roastery and bakehouse teams, reaching finally to the community we serve. The Subkoverse is a collective designed to **intentionally bridge the gap between the origin and the destination**, ensuring that the integrity of everything we serve is a direct function of the strength of these links.

We recognize that the integrity of everything we serve depends entirely on the strength of these links. All contribution is a relay of skill, and we are profoundly aware of the individuals who hold their end of that chain with such care.

As we mark our sixth year, we are celebrating these proximities. We’re looking back at the people, the processes, and the shared intentions that have turned a vast subcontinent into a singular, cohesive community.

Six years in, we are still connecting the dots. More than reflecting on the distance we’ve traveled, we are excited to see where these connections take us next.

I SCREAM. YOU SCREAM. WE ALL SCREAM FOR…?

A very, desi summer has always had one undisputed ruler: Mr. Ice Cream-wallah.

Long before we had apps to crush our cravings, we had the rhythmic clang of a hand-bell and the shimmering mirage of a “Mazze-dar” cart appearing out of the heat-y haze. That frantic, high-stakes race to finish your cone before the sun reclaimed it? That’s embedded in our collective DNA.

At Subko, we’ve been going down a rather delicious rabbit hole. We’ve obsessed over the physics of the “perfect swirl” and the soul of this quintessential summer-treat. This great equalizer. We wanted to take that core memory and give it a “Bohot Hard” upgrade and design a very “Soft” (and creamy) experience.

The boarding gates to this nostalgia will be announced soon. Wishing you a smooth departure and an even soft(i)er landing.

THE BALARAMAN BLUEPRINT

In 2006, brothers Prakashan and Mohan Balaraman inherited more than land. They stepped into Riverdale, named by the British for the “dale” that ran between two valleys. At 21 and 20, they became third-generation custodians of the land. They quickly recognized that heritage alone would not meet global Specialty Coffee standards.

Like the Crested Serpent Eagle, that serves as the estate’s watchful emblem, they hit refresh on decades of cultivation. They traveled across coffee-growing regions worldwide, built a state-of-the-art cupping lab on the estate, and immersed themselves in cupping, a discipline that informs every decision in Specialty Coffee.

What followed was deliberate reinvention. Sixty percent of the estate was replanted. Gravity separators and color sorters were installed. African-style raised beds were introduced. Precision replaced guesswork.

Machinery, however, was only part of the shift. The Balaramans restructured systems of work, knowledge sharing, and community, aligning technical rigor with collective purpose.

This film traces a twenty-year transformation. It shows that while history can be inherited, excellence must be built, ground-up.

We are humbled to welcome Riverdale Estate as our latest farm partner. This season, we introduce five distinct microlots from their harvest, each a direct expression of their pursuit of precision, reinvention, and shared purpose in Specialty Coffee.
