​Dhamsa Tribal Kitchen is a unique culinary and cultural destination located inside Eco Park, New Town, Kolkata. Spearheaded as an initiative to bridge urban audiences with regional indigenous heritage, the restaurant is architecturally designed to resemble a Dhamsa (a traditional Santhali percussion drum) and is situated adjacent to the ‘Banglar Gram’ (Bengal Village) exhibit...

1. Key Concept & Ambiance

​Theme: Authentic tribal and ethnic food of Bengal and neighboring regions, served in traditional Kansa (bell metal) utensils.
​Architecture: A 22-foot high structure built to mimic a Santhali drum. The air-conditioned interiors feature traditional mud-and-mat relief art, geometric tribal paintings, and rustic wooden furniture.
​Environment: Surrounded by manicured lawns, bamboo groves, and a rural village layout featuring mock paddy fields and thatched huts, providing an immersive escape from the city.

Signature Delicacies

​Baanspora Mangsho (Mutton/Chicken): Meat slow-cooked inside burning bamboo shafts with minimal oils and rustic spices, locking in intense woody flavors.

​Khorika: Meat or fish threaded onto bamboo skewers and grilled over open charcoal fire.

​Mala Pora & Potro Pora: Traditional leaf-wrapped, ash-baked fish delicacies (such as Baby Bhetki).

​Kalo Chaler Bhat / Payesh: Rice dishes utilizing nutritious, indigenous black rice, giving desserts a deep purple hue and sticky texture.

​Regional Thali Curations

​Orgram Thali: Features traditional Ghee Bhat, Aloo Posto, Macher Kalia, and Posto Murgi.

​Borishaler Thali: Centered on flavors from eastern undivided Bengal, featuring Shutki Bharta (dried fish mash), Kucho Macher Bhuna, and Kassa Murgi.

​Panta Bhat er Thali: A rustic summer meal featuring fermented rice served with seasonal bhartas, Bori Chura, and deep-fried local anchovies (Kucho Maach Bhaja).
