☕ Coffee & Walnut Cake Recipe

🧾 Ingredients

For the Cake:

200 g unsalted butter (softened)

200 g caster sugar

4 eggs

200 g self-raising flour

2 tbsp instant coffee granules

2 tbsp hot water

100 g walnuts (chopped)

1 tsp vanilla essence

For Coffee Buttercream:

100 g unsalted butter (softened)

200 g icing sugar

1 tbsp instant coffee

1 tbsp hot water

Chopped walnuts (for decoration)

👩‍🍳 Method

Prepare Coffee

Dissolve instant coffee in hot water. Let it cool.

Cream Butter & Sugar

Beat butter and sugar together until light and fluffy.

Add Eggs

Add eggs one at a time, beating well after each addition.

Add Flavor

Mix in vanilla essence and prepared coffee.

Fold Dry Ingredients

Gently fold in self-raising flour.

Add chopped walnuts and mix lightly.

Bake

Pour batter into a greased and lined 8-inch cake tin.

Bake at 170°C (340°F) for 30–35 minutes.

Check with a skewer—if it comes out clean, the cake is ready.

Cool

Let the cake cool completely before frosting.

🧁 Coffee Buttercream

Beat butter until creamy.

Add icing sugar gradually.

Mix in dissolved coffee.

Beat until smooth and fluffy.

🎂 Assemble the Cake

Spread buttercream over the cake (or between layers if making two layers).

Decorate with chopped walnuts.

⭐ Tips

For a stronger coffee flavor, add ½ tbsp more coffee.

Can be baked as a two-layer cake for a more classic look.
