Vinusha MK, a Class 5 student of Amrita Vidyalayam, Chennai, is the Founder & Chief Baking Officer of Vinusha Four Seasons Pastry, which offers cupcakes that are inspired by the four seasons. While the base for the Four Seasons cupcakes remains the same, the cream and frosting are very different. They represent the four seasons. For winter, it comes with a snowflake made out of fondant, orange reflects summer, flowers herald spring, and scattered orange leaves depict autumn. At the age of 10, she has a clear has a vision to establish a culinary institute in India for underprivileged children who are passionate about culinary arts. Environment-friendly substitute for food packaging from raw cucumber waste – cool packaging!! Researchers at IIT Kharagpur have developed cellulose nano-crystals from cucumber peels raising the possibility to create an environment-friendly substitute for food packaging materials. Cellulose nano-crystals derived from cucumber peels possess modifiable properties resulting in better biodegradability and bio-compatibility. Cucumber peels possessed greater cellulose content (18.22 percent) than other peel wastes, making it more viable. The researchers are optimistic about its scope in various fields like paper making, coating additives, bio- composites, optically transparent films.
