We've reinvented our cult favourite, the espresso tonic!🎊

Rechristening it the "South Indian Bubbly", it's name comes from the coffee base of the drink- a revolutionary high percentage extraction, South Indian Filter decoction.☕️

After having run several experiments for over 2 months we managed to obtain a thick, chocolatey, punchy decoction with extraction levels that rival the Vietnamese 'Phin' (above 26%, as compared to the standard 17-18%) while still maintaining it's Indian identity.🧪

This insane discovery is now being used in the coolest coffee drinks, an SIF menu like no other. It's totally unique, one of a kind, and staunchly Ruby's!🥃

Pictured here, the South Indian Bubbly, with quininey notes of the tonic infused with orange bitters, that pairs so well with the earthy coffee!🍊

We've been working on an insane coffee science project and some fantastic new drinks incorporating the results of the experiment are what we got at the end. The stunning cold foam iced latte is just one.
