Chocolate Muffins - a lovely treat for any occasion, but especially nice for Valentine’s Day ❤️
Ingredients
125ml plain yoghurt (we use natural or Greek style)
125ml vegetable oil
3 eggs
175g caster sugar
150g self raising flour
25g cocoa
Pinch of salt
Chocolate chips
Preheat the oven to 180°C and line the tin with bun cases.
Add the yoghurt, oil and eggs to a large bowl and stir to combine.
Gently stir in the dry ingredients - caster sugar, flour, cocoa and salt, until everything is combined. Avoid over mixing.
Divide the mixture between the bun cases - if you want larger muffins, then only fill 10 of the cases. A ‘potato scoop’ is great for dividing out the mixture.
Top with chocolate chips before putting into the oven.
Bake for 20 minutes.
Remove from oven and cool on a wire tray.

An ideal bake for children especially, as it can all be mixed by hand - no need for an electric mixer.
The addition of yoghurt makes these a healthier version of a muffin.
Use 175g flour and omit cocoa powder for plain muffins.
Zest of an orange could also be added to create a lovely flavoured muffin.
Lemon zest would work really well with the plain muffins.
