SPIT- MEET THE WINEMAKERS
Goutorbe-Bouillot is a Grower Champagne estate based in Damery, Vallée de la Marne. The domaine is run by lawyer-turned-winemaker Bastien.
Champagne Goutorbe-Bouillot is a small grower Champagne house located in the village of Damery,Vallée de la Marne. Family-owned and operated since 1911, the estate is owned today by lawyer-turnerd winemaker Bastien Papleux, grandson of Jules Goutorbe and Louise Bouillot.
Goutorbe-Bouillot Champagnes are produced by a method similar to the Solera system. Each year Bastien uses 50% of the reserve wine in the blend for that cuvée. The wine contains some of all the earlier vintages in decreasing proportions resulting in more maturity and complexity to the wines.

SPIT - MEET THE WINEMAKERS...
Tiago Teles , a wine writer turned winemaker since 2012. His philosophy is to preserve and respect nature and the territory of origin. He first started his wine project in his native Bairrada and ventured into Vinho Verde thereafter where he has explored native grape varieties. In 2015, he revived two inner worlds in the northern end of Lisboa: the rehabilitation of an ancient granitic rural aggregate, at Quinta da Cancela, in Arcos de Valdevez, and the rebirth of the vineyards from Quinta dos Cozinheiros, close to Figueira da Foz – in an attempt to mix new and up to 50-year-old vineyards, in partnership with António Marques da Cruz from Quinta da Serradinha. Tiago's respect for authenticity is not limited to working in the vineyard, it also extends to the cellar, where he is concerned with maintaining the true expression of the grapes he uses, limiting the intervention of anything that could distort it.
His wines burst of purity and vibrancy with an identity of place.

Pioneers in the Savoie, Domaine des Ardoisieres is located in the remote valley of Tarrantaise. The project began in 1998 with the replanting of abandoned mountain terraces with the local grape varieties - Jacquere, Roussanne, Altesse, Mondeuse Noire, Mondeuse Blanche, Chardonnay, Gamay, and Persan. In Savoie, single varietal wines are tradition, but for Dom. des Ardoisieres it's all about blending. The wines are classified IGP rather than Vin de Savoie AC as the hillsides are so steep (some at 60%) that they get 2 hours less of sunshine per day. However, ripening has never been a problem, and these wines have gained recognition locally and internationally for their beauty, purity, and representative nature of the terroir.
