Leek and Celery Soup

Benefits of this Winter Soup 🥣

Leeks are a great source of B9 (folate), High in Fibre and are a prebiotic for your gut.

Celery is a great source of antioxidants, fantastic for skin health and is anti inflammatory.

Recipe:
2 leeks
1/2 a celery bunch
2 garlic cloves
2 tbsp extra virgin olive oil
Organic chicken stock cube
1 litre of water
Parsley for serving.

Method:

Add 2 tbsp of extra virgin olive to a saucepan and heat over medium heat.

Sauté chopped leeks and celery in a saucepan until soft. Add two cloves of garlic to the mix.

Add 1 litre of chicken stock and allow to simmer for 20-25 minutes .

Blend and enjoy x

Add parsley when serving ( I added parsley in the soup also)

Let me explain to you Why I recommend making these energy balls rather than buying them in the shops 😀👏🏼

1. You can manage the portion size rather than consuming a large bought protein ball in one sitting. Instead make smaller energy balls so you have the option of two snacks during the day.

2. You can control the sugar content when making them at home. These energy balls have no artificial sweeteners or honey added to them.

3. When you make them at home you can mix the nuts and seeds weekly so your getting a variety of nutrients.

4. You can incorporate higher fibre ingredients to promote regular bowel motions and maintain a good cholesterol.
