After 15 years of history in Labuan Bajo, we have decided to push the concept of authenticity beyond all boundaries. Our creativity is evolving: you will no longer find it in the manipulation of the recipes, but in the rigor and depth of the experience we have built for you.

What does MadeInItaly 2.0 mean in practice?

📍 The Embassy of the 20 Regions: We have mapped the entire Italian peninsula. Every dish on our menu is an official "ambassador" of a specific territory. We don’t serve "generic Italian food"; we serve the specific heritage of each region, strictly respecting the original traditional methods.

🌾 The Purity of Ingredients: To make this journey possible, we have revolutionized our sourcing. We use exclusively premium raw materials selected at the source: Grey Mullet Bottarga from Sardinia, Montasio DOP from Friuli Venezia Giulia, Cicerchie from Basilicata are just some of the examples coming directly from small, elite producers across Italy.

🧠 Intellectual Evolution: Today, true innovation lies in protection. We have chosen not to "touch" the classics, but to create the perfect context for you to experience them. Our creativity has shifted toward researching the deepest roots—those that are rare to find today even in Italy itself.

It’s hard to put into words what this journey has meant to me.

On February 26th, we quietly marked 15 years of MadeInItaly in Labuan Bajo.
What started as a small dream in 2011 has grown into the institution it is today through the principles that have always been my life principles: hard work, consistency, dedication, and discipline.

I remain as hands-on today as I was on day one, ensuring that every detail meets the standards I believe in and I am proud to see my staff growing alongside me after years of hard training, as we continue to push for excellence together.

Through this unwavering dedication, I have had the profound honor of earning the trust of many—serving Ministries, Ambassadors, the President of the Philippines, the First Lady of Singapore, and so many others who chose our Restaurant for their most important moments.

I haven’t just been serving pasta; I’ve been building a legacy of excellence in the place I call home.
To my team and to you, my guests: Grazie di cuore.
I am only here because of your trust.

A bit late to post, but the gratitude is timeless. I look forward to continuing this path with the same passion and humility I started with 15 years ago.
