Ijen is one of Potato Head’s continuous projects in innovating towards sustainability within the hospitality industry.
Spearheaded by our own Culinary Director, Chef Wayan Kresna Yasa, Ijen is the first seafood restaurant in Indonesia to follow zero-waste philosophy through the implementation of multiple circular economy initiatives spread across the built environment, the products and the people itself.
