Pi**ed Prawns with Spicy Garlic Butter
This is about a 5 minute recipe, perfect for tapas style nights or lazy evenings. I’d suggest preparing all the ingredients first as the prawns will take less than a min to cook through; you’ll want to serve the pan immediately, pipping hot and with lots of crusty bread 👌
*These prawns were already prepared, with the tail on for easy dipping (but do as you like for your version!)
Recipe for 2 servings:
3tbsp extra virgin olive oil
2tbsp salted butter
3 garlic cloves, finely chopped
1/2 red onion, finely chopped
6-7 cherry tomatoes, finely chopped
Splash dry white wine (150ml or so)
400g king prawns, prepared
1-2tbsp red chilli flakes
3-5tbsp (big bunch) parsley, finely chopped
Juice from 1 lemon
Sea salt / black pepper, to taste
> add the oil and butter to a large skillet style pan (good for serving), using medium heat. Once melted together add the garlic, onion and tomatoes.
> Fry without colouring (just to soften) for a couple of minutes. Add the wine, let simmer for 30 seconds, then add the prawns.
> Cook until the prawns are just cooked, then add the chilli, parsley and lemon, season to taste and serve immediately.
