A simple thing, done exceptionally well.This chicken shawarma is slow-grilled, deeply spiced, then finished in shallow clay pans gas-lit from underneath. Instead of reheating the bread on metal or in an oven, the flatbread is pressed directly into the hot clay, where it toasts gently, picking up texture, heat, and a subtle earthiness you don’t get any other way.This method isn’t common across the Middle East.
