Episode 10 - 2025 Sausage Series - Saveloy

The chaps at @weschenfelderdirect who sponsor my sausage series, sent me their red collagen casings and Saveloy Seasoning mix to sample.

As I say in the video,  I've not made a fully emulsified sausage before so this was the first time. A lot of sausage safety is defined by temperature control and these are the most extreme example of that. When mincing, blending, stuffing, poaching, chilling, smoking, chilling etc you have to be really conscious of temperature. Quite a lot of hard work to make.

I split the batter into two and did one with the pure Saveloy Seasoning and another with some garlic and @jdshothoney 

The collagen casings worked well and I didnt manage to burst anything when stuffing. I did some cold smoking with hickory wood in my @bradleysmoker_europe raven smoker for extra flavour.

A massive shout out to 'traditional fish and chips st neots' who agreed to batter my sausage for a really authentic experience. They came out great,  Smokey, bouncy texture, nice and big and taste just like Saveloy!
