🍇Greek Cypriot Vine with Grapes 🍇

I’ve been lucky enough to get away to Cyprus this summer and I spotted these juicy beauties!

Both red and green grapes contain a mix of vitamins including B vitamins and especially folate, which is the food-based form of folic acid, and is important for the health of our blood cells and cardiovascular health. They also contain some vitamin C, which is a potent antioxidant and helps support the function of the immune system, and vitamin E which also plays a role in skin and eye health. 👁👍🏼

My go to chickpea soup for a warming lunch. I've shared my method with you below:

• Start off with 500g soaked and moist chickpeas.
• Pur in a frying pan with a generous amount of oil.
• Next add 2x large chopped onions to the pan with a pinch of Rosemary. Allow onions to soften.
• Next add about 3 cups of boiling water with 3x bay leaves and some veggie stock.
• Leave to simmer with a lid for about 15 mins.
• To make it extra creamy mash your chickpeas a little
• Squeeze some lemon and season to taste.
