WSET
Know where we are? Here’s a clue… only one grape variety is permitted here. 👀
In steep vineyard regions such as Cornas in France’s Northern Rhône, growers often use the traditional échalas system, where each vine is individually supported by its own wooden stake rather than a modern wire trellis.
The region’s steep slopes make mechanisation difficult, while strong winds such as the Mistral mean vines need additional physical support. As shoots grow, they are tied and trained by hand throughout the season, sometimes using natural materials such as reeds or straw ties, helping growers control vigour, organise the canopy and improve sunlight exposure.
It is a labour-intensive but highly effective approach to vineyard management, demonstrating how decisions in the vineyard can directly influence grape development and wine quality.

Sake isn’t just for sipping - it’s actually one of the most versatile cocktail ingredients behind the bar. Here's why:
✔ Adds texture without overpowering other components
✔ Brings umami (a game-changer in drinks)
✔ Naturally lower ABV than spirits
From spritzes to twists on classics, sake opens up a whole new flavour dimension if you tap into a style that fits the flavour profile you're building in your drink.
