The Yorkshire forced rhubarb season is one of the most anticipated among chefs, and my personal favourite.
I love the balance in flavours and textures in this dish, the creamy set custard and acidity from the rhubarb, the nutty aftertaste from pine nuts in the crumble really make a superb finish.
