If you feel uncomfortable when you have to speak French with a stranger, or even with your lovely neighbour, that's perfectly normal! Remember that you are making an effort to speak in the other person's language, and that they will appreciate it and even try to help you! So sometimes they will respond in English, which is a natural reflex and may upset you, but don't hesitate to explain that you want to improve. Say, for example: "excusez-moi, mais j'aimerais vraiment m'exercer en parlant avec vous, j'apprends beaucoup comme ça !"
