What keeps oat drinks, dressings and mixed drinks from separating?
Many beverages and liquid foods rely on emulsions: two liquids that normally do not mix, such as oil and water. An emulsifier makes this possible by accumulating at the interface and reducing interfacial tension, helping to keep droplets from merging again.
The practical challenge: the finer the droplet distribution, the larger the total surface area – and the more emulsifier is needed to cover it. Choosing the right emulsifier therefore depends on the product matrix and the target emulsion type. The HLB value helps guide this choice: lower HLB values favour water-in-oil systems, higher values favour oil-in-water systems.
