There is a lot more preparation to the maple syrup season then you would think! Over the winter we spend a lot of time managing our sugar bushes and making sure that the next generation on sugar maples can grow up strong and healthy. We work at removing sick or dying trees so new growth has the chance to grow. This is just one of many steps to make sure that our sugar bush is able to provide delicious maple syrup for generations to come.

Only steam! Our wood fired evaporator is very efficient, so no smoke. The season is winding down, and all most over. It goes by too quickly every year, for me.
