For Chef Alex Kim, cooking over charcoal has always meant more than flavour.
It brings him back to summers spent with his grandparents in Korea, where meals cooked over live fire became some of his earliest memories of food.
Today, that same approach shapes the Fraser Valley free-run Loong Kong chicken in The Altitude: BC Spring. Gently charcoal grilled to bring depth, warmth, and character to the ingredient, while letting its natural flavour remain at the centre of the plate.
A personal memory, expressed through British Columbia’s season.
The kind of view that reminds you to slow down.
Some moments at Five Sails are hard to put into words. The light outside softens, the room quiets, and for a little while, everything slows down.
