You see a lot of posts on contribution margin (CM$) and food cost percentage (FC%). Most of them pick a side. Real life in the kitchens is often more unclear.
Either one of these plates might be the better call for your operation:
Chicken Breast with sides: $15. 23.8% food cost, $11.42 CM per cover.
Stuffed Chicken Asiago with sides: $26. 26.1% food cost; $19.21 CM per cover.
Food cost is slightly higher on the Asiago. Contribution margin is almost eight bucks better per cover. That doesn't automatically make it the winner. Too many factors at play. Your crew, your equipment, prep time and space, your ticket times, and what your guests actually want to eat.
The point is to know your numbers. Make decisions based on what's really happening in your business, not on what a consultant says worked for someone else.
