Night one was an incredible experience filled with culinary creativity, cultural storytelling, and meaningful connections. I had the opportunity to showcase my take on Jamaican Escovitch through an Escovitch Salmon served with a Red Stripe beer blanc sauce using and crispy bammy — a dish rooted in tradition while embracing modern Caribbean cuisine.
