I keep these ‘Marinade Basics’ ingredients on hand throughout BBQ season. You can whip it together in the morning, before work, and let the flavours do their work all day!

Ingredients:

1/4 cup soy sauce (or tamari)
2 tbsp toasted sesame oil
2 tbsp brown sugar or honey
1 tbsp rice vinegar
2 cloves garlic, minced
1 tsp fresh ginger, grated
Method:

Combine all of the ingredients in a shallow, airtight, resealable container and whisk well until the sugar has dissolved.
Add protein of your choice such as a lb of boneless skinless chicken thighs or a single pork tenderloin. Coat well and refrigerate for up to 24 hours.
BBQ on medium heat until it has reached the desired internal temperature. If using pork tenderloin, cover in foil and allow to rest for 10 minutes before slicing.
Feel free to multiply the recipe based on the amount of protein you are preparing.
Optional add-in: 1/2 tsp of chili paste for heat

The Only Marinade You Will Ever Need

Mediterranean-inspired marinade bursting with flavour! Garlic, zesty lemon, and the richness of extra virgin olive oil - it’s a flavour journey you won’t want to miss. Perfect for marinating poultry, meat, veg or seafood. Who needs anything else?

Ingredients :

1/4 cup fresh lemon juice
1/2 teaspoon hot pepper flakes
1/2 teaspoon cracked black pepper
1/2 teaspoon coarse salt (kosher or sea), or to taste
4 strips of lemon zest
3 cloves garlic, crushed with the side of a cleaver or minced
1/4 cup coarsely chopped fresh parsley
1/4 cup coarsely chopped fresh basil, cilantro, dill, oregano, or a mix of all four
1/2 cup extra virgin olive oil
Directions :

Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a glass or ceramic bowl and whisk until the salty is dissolved. Add the lemon zest, garlic, parsley and other herbs. Whisk in the olive oil. The power of this marinade is its freshness: Use it within 1 to 2 hours of making it. For best results, marinade all day, use at dinner!
You can also add it to portioned proteins heading for the freezer. They will marinate while freezing and again while defrosting.
