I don't know about you but I do love my breakfast. π₯° There are so many options, smoothies, and muffins that you can take on the go. They are particularly good for a Monday morning when the last thing you want to think about is what to make for breakfast.
On the weekend a nice avocado egg toast with a nice black coffee makes me happy... or a nice waffle with almond butter and berries π
I know today is Monday and the race of the week starts ad it's easy to get out of the home and grab something on the way to work.
And yet there are the ones working from home that take in till the last possible minute they can to sleep and end up skipping breakfast altogether. I get ya and I have been there myself too. and Timmy to the rescue. Am I right? π
But I must confess I hate to feel rushed in the morning so for Mondays I like to have a quick breakfast so I usually make something the day before, like a smoothie and some muffins. You can even have a chocolate muffin. Yep, I said chocolate muffins for breakfast π This recipe I am sharing is gluten-free and white sugar-free as well and they are filled with fiber and they are so fluffy. π₯°
Here you have it my Chocolate muffins recipe
2 cups Almond Flour
1/4 cup Cocoa Powder
1/4 tsp Sea Salt
1/4 tsp Baking Soda
1/4 cup Extra Virgin Olive Oil
1/4 cup Maple Syrup
3 Eggs
1 Zucchini (medium, grated, and drained of water)
Preheat your oven to 350ΒΊF (177ΒΊC) and line a muffin tin with muffin liners. Brush each liner with a small amount of coconut oil, to prevent sticking.
In a large mixing bowl, combine the dry ingredients - almond flour, cocoa powder, sea salt, and baking soda. Mix well.
In a medium-size bowl, whisk together wet ingredients - the olive oil, maple syrup, and eggs. Add the wet ingredients to the dry. Mix until combined then stir in the zucchini.
Spoon the muffin batter between cups, so it's evenly divided then bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let cool completely before eating, this will prevent the muffins from sticking to the liners.
