Roasting vegetables brings out the richer, deeper flavor that is hidden from the tastebuds until the heat activates their inner sugars, reduces the water content , concentrating the textures and flavors and their texture becomes crispy and pleasing to the palate.
I’ve always enjoyed a roasted baby potato salad but had never tried roasting Radishes. But here they are, delicious on their own but this nutritious salad elevated to the highest level of “Yumm!” When I roasted those “lowly” Radishes.
