Eating with the Seasons?  Remember those bright colourful pigments in fruits and vegetables are the source of powerful antioxidants and phytonutrients. 
It’s the time of year when persimmons make their appearance in the markets!  These sweet, firm, orange coloured fruits pack a powerful punch of vitamins and nutrients.  They contain more than half the RDI of vitamin A, 20% RDI of vitamin C, as well as beta carotene, flavonoids, carotenoids and tannins, all vitally important, health protective antioxidants.  These compounds help protect against heart disease, high blood pressure, type 2 diabetes and lung cancer.
Their high fibre content helps protect against colorectal cancer, lowers cholesterol and reduces high blood sugar levels. The vitamin A and beta carotene protects eye health and lowers your risk of macular degeneration. Vitamin C, another powerful antioxidant reduces inflammation throughout the body.
The heart shaped Hachiya persimmons are more astringent and must be fully ripe before eating.  I prefer the tomato shaped Fuyu persimmons, firm and crunchy!
