Well it's a couple months yet until I'm baking for the Farmer's Market, so I'm taking this time to cleanse. Yes, the whole family is on a candida cleanse and I have had to get creative in the kitchen. Snacks have proven to be the most challenging for the guys in the house. Trying to keep them from loading up on carbs, I searched the internet and found a grain free recipe for pumpkin bars at detoxinista.com, which I adapted slightly. Light, fluffy and slightly sweet, they were a hit. So I am happy to share the recipe...

1/2 cup organic pumpkin puree
1/2 cup unsweetened, organic almond butter
1/4 cup xylitol
2 organic free range eggs
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1 1/2 tsp vanilla extract
1/4 tsp sea salt
1/2 tsp baking soda

Pre-heat oven to 350º
Mix all ingredients well, pour into greased 8x8 glass pan. Bake for 25 minutes. -Enjoy

'Tis the season for Christmas baking. My 10 year old daughter came up with this recipe, and kindly allowed me to share it with you. Basically she took a simple recipe of mine and removed anything that could be consider healthy. ha ha! ie: oats, buckwheat, chickpeas...then added in her favorite things.
These cookies are incredible, I hope you enjoy.

Pre-heat oven to 350º
*mix following ingredients together in a large mixing bowl with a whisk
1 cup organic sorghum flour
1/2 cup organic millet flour
1/2 cup organic brown rice flour
1/4 cup organic tapioca flour
1 tsp xanthan gum
1 tsp sea salt
1 tsp baking soda
*in a separate bowl or Kitchen Aid mixer cream together;
1/2 cup organic cane sugar
1/2 cup brown sugar
3/4 cup organic vegan shortening
*then add in;
2 farm fresh eggs, well beaten
2 tsp organic vanilla extract
5 drops of organic peppermint oil
*blend on medium until mixed well
add dry ingredients from your other bowl and continue to mix until batter is consistent, then add;
3/4 cups vegan dark chocolate chips (mini)
3/4 cups crushed candy cane (aprox. 10 canes)

Using an ice cream scoop, drop cookie batter on to parchment lined cookie sheets, and press down to flatten lightly. Bake for approximately 12 minutes.
Allow cookies to cool on wire racks. Enjoy!
