120 minutes. 100 cream puffs. One tower. ⏱️🥐
This special order croquembouche took two full hours to build by hand — every puff filled, dipped, and stacked one at a time until it held its shape. We compressed it all into 30 seconds so you can see exactly what goes into a custom order this size.

From opening day to this moment — we couldn’t be prouder. 🎓🤍
Hannah has been with us since the very beginning of Choux Atelier. Through the hardest days and the happiest ones, she’s shown up for this team again and again — and somehow, alongside all of that, she just graduated from the University of Ottawa with a degree in Health Science and a minor in Psychology.
We’ve watched her grow into someone who handles a busy bakery counter with the same care she’ll one day bring into healthcare. That kind of dedication doesn’t go unnoticed.
This one’s for you. Congratulations — we’re so lucky to have you. 🎉

Most people assume a light, airy sponge roll comes from a French kitchen. But the chiffon cake? It was born in California in 1927 — an American secret kept for 20 years before the world finally got to taste it.
We took that story. Added French pastry technique. And then gave it a soul — pandan. 🌿
One of the most iconic flavours in Southeast Asian cuisine. Earthy, fragrant, and deeply nostalgic for anyone who grew up with it. At Choux Atelier, we didn’t have to choose between our influences. We layered them — the way you layer a perfect roll cake.
American origin. French discipline. Asian heart. Made from scratch, every single morning in downtown Ottawa. 🤍
