Mini cheesecakes, get your mini cheesecakes! I’ve received my new trays, my tamper, and have completed some tasty trial runs! These little bitties are perfect for parties, dinners, or any celebration that calls for a rich, handheld dessert. Basic bites are $20/dozen; premium flavours and toppings for a little more! Mix and match toppings (up to three types/dozen), or get em all the same flavour! Anything I make in a full-sized cake can be made miniature, the size of a two-bite brownie - but if you eat them in one bite, I ain’t judging! And then she rests in the oven for an hour with the heat off, to slowly lower the temperature instead of shocking it with a drastic drop quickly. Setting it on the counter for an hour afterward prepares her for a night in the fridge. This helps to prevent cracks and sinking, and she will be ready and set by morning!
