1 lb baby carrots - washed and trimmed if necessary
2 T butter
S & P
2 T honey
1 T fresh lemon or lime juice
1 tsp dried thyme or 1 T chopped fresh
⅓ cup water
Place all ingredients in a pan, cover, and place over medium heat. Allow to gently steam for 4 - 5 minutes or until the carrots are tender. Remove the lid and continue to cook, allowing the liquid to reduce to a nice glaze. Continue cooking until the carrots begin to get some colour. Serve with anything and everything
Too damn hot to turn on the oven? Bake sourdough and focaccia on the barbecue with a pizza stone for a crisp, golden finish. Cook a lasagna or a casserole if that’s your vibe on a hot day. Do with it what you will.
Sticky Ginger Scallion Chicken Lettuce Wraps
Serves 6
2 lb boneless skinless chicken thighs - cubed
1 T neutral oil
S & P
Heat a cast iron until rippin hot. Add oil. hot and carefully add diced chicken. Season and continue to cook until browned (doesn’t have to be 100% cooked through). Transfer chicken to a plate and build glaze in the pan.
Sticky Ginger Scallion Glaze
1 x 2 inch piece of ginger - peeled/julienned
2 cloves garlic, chopped
3 T soy sauce
2 T rice vinegar
2+ T water
¼ cup honey
2 T brown sugar
2 tsp sesame oil
2 green onion (white and green kept separate) - chopped
Additional water as needed
S & P as needed
To make the glaze, pan back on medium heat, add additional oil if needed. Add ginger, whites of green onions and chopped garlic to the hot pan. Sauté briefly before adding soy sauce, vinegar, water, honey, brown sugar, and sesame oil. Bring this to a simmer and allow to reduce for 2-3 minutes or until it thickens slightly. Add back chicken and any accumulated juices to the pan. Continue to cook this until the chicken is cooked through and the glaze is coating the chicken nicely. Add remaining green onions and its ready to serve.
To serve you will need 4 cups of cooked jasmine rice, iceberg lettuce wash and separated into lettuce cups plus some or all of the following:
Cucumber
Fresh mango slices
Fresh cilantro
Green onion
Crushed roasted peanuts
Lime wedges
Crispy onions
Pickled carrots
