Baingan aaloo - ok I promise I’ll stop insulting cuisine but my obsession with eggplant is the worst kept secret. This one is roasted and marinated in tamarind sauce and thyme then topped with roasted potatoes, beets and pickled radishes

Combining techniques and flavours for this awesome Salmon dish. and pan seared Salmon served on top of some stir fried gaiolan (Chinese broccoli) served with a turmeric and lemongrass curry. Mostly I cooked it because of the contrasts of colours and textures but the flavours worked well together
